Sugar Cookie Bars

Do you like sugar cookies? M'kay then. Lemme ask you this: do you like how long it takes to make them and then decorate them?
I must admit, I loved the tradition of it all when I was little and my mom did all the work. I was on hand to help with sprinkles. And eating, of course.
But now that I'm a momma myself and the holidays are chock full of busy-ness, I don't ever find the time to make them. This is much to the chagrin of my husband and kids.
Cue the easiest sugar cookie recipe ever. And you make it in bar form on a cookie sheet.
BAM!
When I first saw Kimberly make these with her girls I thought I could handle that. It looks easy enough.
So I did. 
And my husband declared them the.best.sugar.cookie dough he'd ever had.
Instant success, people!
In case you're wondering why these are only half-iced, its because Eric doesn't care for the icing and sprinkles. But everyone else around here does.
So we compromise.
Even though I technically made these after Christmas, no one around here seems to care.
And the recipe, originally from here, is now going to be filed under our favorites.

*I will be honest in telling you that I wasn't initially super impressed with the taste of the icing, which called for shortening and butter. It seemed too bland to me.(it has since grown on me so I don't mind it) But this very issue was addressed in the comments section of the original blog post so feel free to read others' suggestions about that.*
